pork with sage and apples

I found this recipe in “Women’s Weekly” – my favourite cooking knowledge source – and we all fell in love with the result. Pork with sage and apples is a divine combination which reminds me of fireplaces, candles and winter. As a family of 4 with 2 teenagers, we need multitude of food and quick but fancy dinner dishes so this recipe went straight to my list of The Best Ever one-pot recipes.

We try to follow at least partially the Ayurveda principles for food-combining so whenever possible I opt for dishes based on one main food group – either protein or carbs – accompanied by dips, vegetables or salads. Even though this task is not always feasible, especially in such a busy home as ours, we still do our best to avoid overwhelming food quantities or qualities. The culinary world is endless so there is always a colourful yet simple recipe for homemade dinner which would please and nurture, without overcharging the digestive system.

I’ve always wondered how some food bloggers manage to write extensive texts with each of their recipes while I cannot think of more than 5 things to say and 1 paragraph to write. As much as I want to compose a sophisticated recipe review now, the word count stays minuscule, there are not enough photos and the whole thing looks more like a postcard than a respectable eatery entry. Even the publishing tools of my blog template insist that the post’s readability needs improvement and SEO doesn’t look right… Apparently I am not blogger material so here’s the recipe and that will be it:

🍎 pork with sage, onions and apples

what to buy

  • 500g lean pork fillet or 4-6 pork chops
  • 4-6 (or more) organic whole apples, unpeeled
  • 4-6 red onions, peeled
  • 16 sage leaves
  • 500g green beans
  • 1 tsp mustard
  • 1 tbsp fresh parsley
  • salt and pepper to taste

how to make

🌱 Rub the meat with generous amount of salt and pepper, set aside at room temperature for at least an hour and then grill or fry until sealed on both sides.
🌱 Oil a big roasting pan and arrange the onions, sage leaves and apples. Drizzle with oil and bake for 15 minutes at 200°C.
🌱 Make a paste with 1 tsp mustard, 1 tsp sugar and finely chopped parsley, coat the meat and place it into the roasting pan. We sometimes skip the paste and leave things basic.
🌱 Roast everything for another 20 minutes (roasting time largely depends on the oven so it might take less or more) and meanwhile steam/fry or boil the green beans, sophisticating with butter, salt, pepper and a splash of lime juice.
🌱 Serve beautifully arranged and topped with halved apples.
