Well, not quite true because we have strict rules when it comes to sugar consumption but let’s say the bounties we’ve occasionally had for the past decade were 95% offspring of this know-how. And they have always disappeared so quickly that there is not a single decent bounty photo in my archive; only mobile phone images taken in a rush.
Easy, quick and addictively sweet, my bounty recipe is also a direct memory shortcut to those wonderful times when our kids were little, when we had the house of our dreams and life was generally happy. Not that it is less happy now but then there was a simplicity which we’ve somehow lost on the way. Or maybe the world lost it, who knows…

I remember the stone porch steps, nestled between blooming flowers and fruit trees, where I loved to sit and have my coffee with cookies, bounties or a handful of freshly picked plums. It’s been 10 years since we had to sell this house and I still haven’t stopped thinking of it. The memory is so alive in my mind that it surely has something to do with our Australian home now being suspiciously similar in landscape and architecture. The garden has the same feel and the porch steps are here, only wooden. But enough recollections for today, time for the nostalgic recipe:

what to buy
- 200g desiccated coconut (I always go for sulphur-free)
- 200ml cream
- 85g raw unrefined sugar
- 50g organic butter (I tried coconut oil, I didn’t like the result)
- 200g or more organic dark chocolate, melted
- 1 tbsp vanilla sugar
how to make
🌴 Mix sugar, cream, vanilla and butter, and melt over a water bath.
🌴 Fold in the coconut and mix well.
🌴 Line a baking sheet with foil, pour over the mixture and form a block (about 1-2cm). Put in the fridge for at least 3 hours.
🌴 Slice the block into bounties or whatever shapes you like (including balls), melt the chocolate over a water bath and generously coat them. I only use dark organic chocolate free from emulsifiers or other nasties. Sprinkle with coconut or ground nuts, or garnish with white chocolate.
🌴 Put in the fridge for 3-4 hours and then eat in excess.
